The only reason to step onto the cooking area is to clean up after the day, but there is no need to be inside during normal operations.

I will need fire suppression or hood to work out of this. I didn't see that listed. Is this modifiable to be able to add a hood and fire suppression?

It doesn't have a fire suppression system because it wasn't required but if you need to add one there is plenty of room to do so.
