The two room design with the enclosed smoker makes this trailer well suited to year-round, all-weather operation. It has remained fully licensed for food service as a Special Transitory Food Unit and no additional commissary is required for the storage, preparation, cooking and serving of food for direct consumption anywhere in the state of Michigan. The on-board BBQ Smoker was fabricated and installed by the trailer’s original owner. It is a wood fired reverse flow with four pull-out shelves in the main oven and 3 shelves in the rib oven above the fire box. In my experience, this smoker can be used to cook the equivalent of 11 full size deep catering pans in the main oven and up to 15 slabs of ribs. This trailer is still in weekly operation and can be considered turn-key, ready to use upon title and food license transfer.
